Crockpot Creamy Chicken Taco Chili




I've been making a lot of crockpot meals lately and a good chunk of them have very similar ingredients. This recipe was me putting together several of them because I didn't want to pull up my computer to look up a recipe. Turned out pretty tasty if I do say so myself!

Crockpot Creamy Chicken Taco Chili

Ingredients:
2-4 Frozen Chicken Breasts
1 can of corn
1 can of rotel
1 can of black beans (drain & rinse)
1 - 8oz 1/3 fat cream cheese (or whatever fat content you prefer)
1 package of taco seasoning
1 Small Avocado (Optional)


Directions:
Place chicken in bottom of crockpot. Top with corn, rotel, rinsed black beans, creams cheese & taco seasoning. Mix ingredients. I came back occasionally and stirred, but you can wait to do that until the end if you wish. Cook in crockpot for 4-6 hours on high. Shred chicken with a fork. Serve in bowl. Top with slices of avocado.
