Zesty Creole Tilapia

Recipes overwhelm me. I will see something that looks super tasty, but when I look at the length of the recipe I call it quits. First of all, I can't afford to buy the 22 ingredients it calls for especially the really weird stuff I'll never use again. And secondly, 13 steps before it enters my mouth is just too much! Oh & who wants to spend an hour or more in the kitchen? NOT ME!

Since I don't like to follow directions very much I tend to make everything from scratch often times never knowing how to make it again. And certainly never writing down how much or what exactly I used often times causing me to never have that delicious meal a second time.

With this method of madness came the creation of Zesty Creole Tilapia...

In true Jana fashion I wanted to cook something quick & be out of the kitchen in a hurry. I thawed two filets (is that what those are?) of tilapia & randomly combined the following items I had in the house:

What do you need?

1. Tilapia
2. Lime Juice
3. Zesty Italian Dressing
4. Seasoned Salt
5. Creole Seasoning

I apologize now for my method of madness, but it's just how I role. I HATE that half of my moms recipes are "seasoned to taste" because you can't ever make them the same way she makes them...ever! But this recipe is basically that...seasoned to taste.


I sprinkled creole seasoning fairly heavily over the top & bottom of the tilapia. I lightly sprinkled seasoned salt over both the top & bottom. Then topping both sides with splashes of lime juice. Maybe 2-3 squirts on each side. I then covered one side of the tilapia with zesty Italian dressing. I baked the tilapia per the recommendation on the bag which was 425 for 15 minutes (or until flaky).

I used frozen tilapia & even with thawing it out this meal only took 20 minutes to make! I LOVE a quick & tasty meal! I served mine with rolls & green beans, but the sides are up to you.

  4. That looks great! And I think the Italian dressing would probably be a bit healthier than the butter I used in my version.
